Boxed macaroni and cheese is popular because it is quick and easy, all put together in one pot. It is also very unhealthy. I made this shrimp pasta in one pot, in about the same time it takes to make the boxed version, and it is full of real ingredients.
Sweet potato fries have become very popular. However, most of us try to avoid deep frying, and if you have tried to make sweet potato fries in the oven, you know they take quite a while, and go from doing nothing to setting off the fire alarm in about 30 seconds.
Here’s an easier way to get that wonderful, chewy taste.These take between 10-15 minutes if you precook the potatoes in the microwave, and are easy to make as part of a fast meal.

That is all it took to prompt me to make a former favorite that I have probably not enjoyed for two years. My version is quite different than the one that sparked the idea, but that is the beauty of real food. An idea can turn into a custom-created meal in minutes.
