Quick and easy separate freezing
I outlined the process for freezing individual portions of meat after a major shopping trip, but this is an everyday alternative.

I used one quarter pound of ground chicken, which left three portions. I simply formed three patties (wet your hands so the chicken does not stick), and placed them on a plate lined with the plastic from the chicken container. The extra plastic is folded over the top. Pop the plate in the freezer until the patties are frozen firm, and store in a freezer bag.
Unless you have a way to save extra portions, one-person meals can be boring and repetitive. Ground chicken lasts about 10 minutes before spoiling, so I would have had to cook and eat nothing but ground chicken until it was gone.
